Snickerdoodle Cookie Cake

Rich in taste and beautiful looking desserts like trifles, fruit custards, brownies, puddings and most importantly cakes, compliments the whole event.

I have seen a lot of people think that these yummy delights except cakes can easily be cooked at home but when it comes to cakes they tend to order them from very expensive and famous bakeries, because they are difficult and time consuming to bake and decorate. Which is an absolutely wrong perception. Cakes are the easiest and yummiest treats you can bake at home, you just need little instructions and right directions.

Snickerdoodle Cookie Cake Recipe

I love snickerdoodle cookies and I know you people also love these tiny treats. But what if I made a make with these tiny treats? Sounds delicious, right? This snickerdoodle cookie cake is 3 layered glorious vanilla cake spun in a sugar cinnamon streusels. I’m using readymade cake mix of vanilla flavour, but you can make your own homemade cake batter. In between the moist layers of delicious vanilla cake there’s cinnamon and brown sugar frosting with crushed snickerdoodle cookies. While dividing the cake batter in the pans, you can sprinkle the streusels over the layers, so in that way you can taste the taste of streusel in every bite of the cake.

Easy Snickerdoodle Cake Recipe

You can get these snickerdoodle cookies from the market plus if you want to be more creative you can bake these cookies too because the internet has a lot of recipes for these cookies. You need 6-7 cookies in total to spread in between the layers of the cake and to be used crushed over the cake. Let’s have a look at the recipe and directions.

Ingredients:

FOR THE CAKE

  • 1 box vanilla cake mix
  • 1 3.4 ounce box instant vanilla pudding
  • 3 large eggs
  • 1 large egg white
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 cup light sour cream
  • 2 teaspoons pure vanilla extract

FOR THE STREUSEL

  • 1/3 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 1 tablespoon cinnamon
  • 3 tablespoons unsalted butter, melted

FOR THE FROSTING

  • 2 cups unsalted butter, at room temperature
  • 1/2 cup light brown sugar
  • 7 cups powdered sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon pure vanilla extract
  • 2-3 tablespoons heavy whipping cream
  • 5 snickerdoodle cookies

Snickerdoodles Cake Mix

Directions:

FOR THE CAKE

Take 2 pans of 8 inches and grease with butter and dust with flour. Set aside the pans and preheat the oven with 350 degrees.

Take a bowl and pour vanilla cake mix and vanilla pudding, eggs, egg whites, buttermilk, vanilla essence, vegetable oil and sour cream. Beat this mixture well with electric beater. Start with medium speed to combine the mixture than use spatula to scrap down the mixture from the sides and beat on high speed until smooth and well combined. Set this mixture aside and prepare streusels.

FOR THE STREUSEL

Take a bowl and combine all the dry ingredients together and whisk. Now take another bowl and melt the butter in it and pour this melted butter in dry ingredients and mix well to have crumbs like mixture.

Now take out the already greased pans and layer the vanilla cake mix batter and then the streusel, swirl them with the knife and spread the remaining streusel over the cake batter. Prepare both of the pans like this and place in oven for about 35 to 40 minutes. When the cakes are cooked completely, let them cool for 10 minutes. Remove the cakes from the pan and remove the upper surface with sharp knife to make the surface flat and cut each layer in half. Set aside.

FROSTING

Take a medium bowl and add butter, let it come to normal room temperature. You don’t have to melt the butter just use the soften one. Once it is soften, beat the butter for about 2-3 minutes until creamy. Add brown sugar and keep beating for another 1-2 minutes. Now add 1 cup of sugar at a time and keep beating at medium speed and add cinnamon powder and mix well. Now add vanilla extract and heavy cream, already whipped, and mix with electric beater on high speed for about 2-3 minutes until the frosting is smooth, creamy and fluffy.

TO ASSEMBLE THE CAKE

Place the 1st layer of the cake at cake stand and place frosting on it and spread with spatula. Now place another layer of the cake and spread frosting again and even with spatula. Do this three times until all the cake layers are filled with frosting in between.

Now to proceed with, spread the frosting all over the cake surface and its sides and even with spatula and smooth the surface. You can use the frosting in piping bags to fill up the cracks in the cake. Wipe away the excess frosting with knife and smooth the surface. Place the cake in fridge for 30 minutes to harden the frosting meanwhile you crush the snickerdoodle cookies to sprinkle over the cake.

Remove the cake from the fridge and frost at the edges of the cake with the help of piping bag and cover the centre surface and bottom edges of the cake with crushed cookies. Serve cool!
