Oreo Brookie Layer Cake

Chocolate cakes are heaven’s desserts and when they are combined with very chocolaty fudge frosting and Oreos, they became most people’s most favourite delight, including mine. This Oreo brookie layer cake is made up with dense and moist chocolate cake, chocolate chip cookie layer, Oreo layer then chocolate fudgy frosting and topped with chocolate chip and Oreo cookies.

This is the most unusual cake combination with all the yummy and delicious layers of cakes and so much chocolate inside. Though baking this cake is little much of time consuming because it is based on different types of layers and all the layers should be baked separately because it’s not a traditional batter cake, you have to make 3 different batters for the cake layers than frosting and ganache and toppings. While eating this monster, one must ignore the calorie intake because this is too heavy but the delicious taste ignores the heaviness.

Oreo Brookie Layer Cake Recipe

Let’s talk about how to build this cookie monster baby cake. The first layer is the cookie layer, which shouldn’t be over baked because it must be slightly golden and lightly baked. The next layer is of brownie that too you have to make yourself. At first you have to make cookie cake, than brownie layer and at last Oreo cake. I love all the layers equally but the fudgy layer is one of my most favourite, because this is made up from melted chocolate that too shouldn’t be over baked because its moistness and density would be affected. When you insert the toothpick in it to check if it is properly cooked or not, make sure the toothpick come out with little crumbs on it, instead of clean.

Chocolate Oreo Layer Cake Recipe

Then the last layer consists of Oreo cake, which is slightly denser then the other layers because the Oreos in the centre of this layer shouldn’t settle at the bottom and for this your cake must be dense enough. After you are done baking all three layers, combine them step by step and then it is all covered with rich buttercream and chocolate frosting and crushed Oreos. For the beautiful appearance and to finish off, drizzle some chocolate ganache and chocolate chip and Oreo cookies at the top and Serve with style.

Ingredients:

CHOCOLATE CHIP COOKIE CAKE

  • 3/4 cup (169g) unsalted butter, room temperature
  • 3/4 cup (108g) brown sugar
  • 1/4 cup (52g) sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups (260g) all purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups semi-sweet chocolate chips

BROWNIE

  • 1/2 cup (112g) unsalted butter
  • 6 oz chopped quality semi sweet chocolate
  • 1 1/4 cups (259g) sugar
  • 1 1/2 tsp vanilla extract
  • 3 large eggs
  • 3/4 cup (98g) flour
  • 2 tbsp natural unsweetened cocoa
  • 1/4 tsp salt

OREO CAKE

  • 1 2/3 cups (217g) all purpose flour
  • 1 cup (207g) sugar
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 3 egg whites, room temperature
  • 1/2 cup (115g) sour cream, room temperature
  • 1/2 cup (120ml) milk, room temperature
  • 2 tsp vanilla extract
  • 3/4 cup (168g) unsalted butter, melted and slightly cooled
  • 1/2 cup (61g) oreo crumbs
  • 6 Oreos, chopped

CHOCOLATE BUTTERCREAM

  • 1 1/2 cups (336g) butter
  • 1 1/4 cups (237g) shortening
  • 9 3/4 cups (1121g) powdered sugar
  • 2 tsp vanilla extract
  • 1 1/4 cup (123g) natural unsweetened cocoa powder
  • 5-6 tbsp (60-75ml) water/milk

ADDITIONAL

  • 10 Oreos, crushed
  • 4 oz semi sweet chocolate chips
  • 5 tbsp (75ml) heavy whipping cream
  • Chocolate chip cookies, for decorating
  • Oreos, for decorating

Oreo Layer Cake No Bake

Directions:

TO MAKE THE COOKIE CAKE

Take 9 inch cake pan cover with parchment paper and grease with spray oil or butter, preheat the oven at 350 degrees and prepare for the batter.

Take a bowl and beat butter and sugar until creamy and light in colour. Add eggs and vanilla extract and beat well.

Take another bowl, add and whisk all the dry ingredients and add them into the egg/butter mixture and mix well. Now add chocolate chips and mix the dough with hands or slightly hard spatula.

Pour this dough like mixture in already greased 9 inch pan and bake for 20-25 minutes and let the centre slightly undercooked. When it is cooked, remove from the oven and let it cool completely before you get it out of the pan.

BROWNIE CAKE

Tae 9 inch cake pan cover with parchment paper and grease with spray oil or butter, preheat the oven at 350 degrees and prepare for the batter.

In a medium sized heat proof bowl, add chocolate and butter and set it over the boiling water or double boiler to melt the chocolate and butter. Keep stirring the mixture until smooth and set aside to let it cool for 5 minutes.
In another bowl, add sugar, eggs and vanilla extract and beat to get smooth mixture. Meanwhile combine all dry ingredients in another bowl, whisk them. Now add chocolate mixture in eggs and mix well.

Now slowly add dry ingredient mixture to egg/chocolate mixture and mix until combined and smooth.

Pour the mixture in 9 inch already greased and prepared pan and bake in preheated oven for 30-35 minutes. Remove the cake from the oven and let it cool before getting it out of the pan. Make sure you don’t over bake the cake.

OREO CAKE

Take 9 inch cake pan cover with parchment paper and grease with spray oil or butter, preheat the oven at 350 degrees and prepare for the batter.

In bowl, add flour, baking powder, a pinch of salt and sugar. Mix this mixture with a spatula and let it combine.

Now take another bowl, and beat egg whites, add sour cream, vanilla essence and milk and beat until creamy. Now add this mixture to flour mixture and mix well to get smooth batter.

Now add melted butter, crushed and chopped Oreos and stir the batter to combine all the ingredients well.

Set this mixture in cake pan and break for 30-35 minutes and remove from the oven and let it cool, while you prepare the frosting.

CHOCOLATE FROSTING

Take a medium sized bowl, beat shortening and butter until the mixture is soft and creamy. Now add sugar and keep beating to make the mixture even and smooth.

Now in this butter mixture add cocoa powder, vanilla essence, 4 tbsps. Of water or milk and mix well. Then slowly add the remaining powdered sugar and mix well to get the desired smooth mixture. You can add the remaining water or milk to get the desired consistency.

TO ASSEMBLE THE CAKE

With the help of large and sharp knife remove the top edge layer of the cake to get the flat surface. Do this with all three layers of the cakes so that the frosting will settle accordingly and you don’t have to spend more time layering the cake.

Take a cake stand and place cookie cake at the bottom and pour almost a cup of frosting and spread a smooth and even layer with spatula and spread crushed Oreos on the frosting and press with spatula to adjust.

Now place Oreo cake layer and again pour frosting and spread into an even and smooth layer and add remaining crushed Oreos and press to adjust.

Now place final layer of brownie cake and frost the complete cake including edges and the surface and make it even and smooth, add further frosting into the pipe swirls and place in refrigerator, and prepare upper layer of the cake.

Heat whipping cream and pour over the chocolate chips and mix well. Spread this mixture over the top of the cake and let it settle and cool,

Now remove the pipe and swirl the frosting around the edges and place one Oreo and one chocolate chip cookie over the swirls and put the cake in refrigerate.

You can eat this cake in a day or two but if you are serving it fresh, it will be even more delicious and you will definitely get the title of best chef around the town.
