Easter Bunny Cake Recipe

Cakes are mostly liked by children and nowadays cakes are made in diverse shapes by means of using different colors and ingredients. Kids love to have cartoon shaped cakes on their birthday parties.

These cakes not just attract the kids but also the other people who are invited on that occasion. Besides the looks of cakes, the other thing that is mostly desired in cakes is their taste. If the outside appearance of cake is wonderful but its taste is not good then it will not delight anyone. I will share the recipe of a tasty Easter Bunny Cake that can be easily made at home.

INGREDIENTS

For Frosting:

  • Vanilla extract = 1 tablespoon
  • Milk = 2-3 tablespoons
  • Unsalted butter (at room temperature) = 3 sticks (12 ounce)
  • Fine salt = a pinch
  • Confectioners’ sugar = 6 cups

For Making Bunny:

  • Biscotti bought from store = 2
  • Jelly bean pink = 1
  • Flaked coconut sweetened = 1 ¼ cup
  • Marshmallows = 2
  • Layers of round cake = 2 baked (9 inch)
  • Jelly bean black = 2
  • Licorice wheel black (haribo) = 1
  • Jelly bean white = 1
  • Decorating icing pink = 1 tube

DIRECTIONS

For Making Frosting:

Take a stand mixer bowl and add salt, sugar and butter in it and combine them all. You can use electric hand mixer as well. Blend them all on low speed. Then add vanilla in the mixture and blend them well until become smooth. You can also adjust consistency with the milk until you can spread frosting.

For Making Bunny:

Start spreading thin layers of the frosting on one layer of cake on all sides about 2/3 cup as well as again follow the same process with second layer of cake. Also you can measure five inches crosswise top of cake plus cut down all layers, creating 2 layered pieces which are different in sizes.

Put larger portion of cake, you can also use rectangular cake board. Now make bunny’s body. Cut small pieces of cake half across, so you have to make 2 layered wedges. After that put one wedge in front side of body. One side of bunny is flat on board and other side against body. You can place curving side on top side of cake. Take jagged knife and with help of it you can round edges on the top of head. You can reserve the scraps in the bowl.

Divide remaining layers of wedges of cake. You can use it for making back legs. With help of knife, round the edges of cake wedges which are sharp plus add them to scrap bowl. Put 1 piece on both side of bunny along with 1 flat down side and other towards face.

Blend the scraps of cake in medium bowl with help of fork until all mashed. Then pack in the ball with help of your hands. Put balls behind body of the bunny and stick with dab of the frosting. This is known as tail of bunny.

Now chill the complete tail, bunny and other parts by using 2-3 cups of frosting. You have to keep some definition along with all parts of bunny as well as frosting more kindly around any shape to round all parts of bunny. Shower the bunny along with coconut to cover the bunny cake fully. Gently pat for adhering.

Place the biscotti among body and head, pressing them in the cake for securing them. These are known as their ears. Put the ears close towards the center of head plus angle them. Chill front side of all biscotti with frosting and using icing of pink decorating, chill a small strip in middle of all biscotti, where ears meet towards head.

To create bunny face, press jelly bean black in both side of head for eyes. Then cut 1 of marshmallows in the three circles, discard center piece and then press two end circles, cut the side and front of face for cheeks of bunny. Take jelly bean white halves as well as push the face below cheeks, round both sides and then make teeth. Put the jelly bean pink to make the nose.

Unroll wheel of licorice and then cut two pieces about inches of 1 ½. For every piece, peel strips separately towards down and cut all strips separately. You can repeat this process with 2nd portion of licorice. Put all pieces, with pat of frosting and behind marshmallow cheek. Cut 2nd marshmallow half toward lengthwise. Create three slits for each half (these are toes) and put them in front side of bunny legs. Adhere the base of bunny feet with the icing if you like.
